树莓的抗氧化活性与主要化学成分的相关分析

摘要(Abstract):

目的研究树莓提取物的抗氧化活性与总花色苷、总多酚和总黄酮含量间的相关性。方法采集不同品种及不同成熟期的树莓,采用DPPH和ABTS法测定各树莓乙醇提取物的清除自由基能力,再分别采用pH示差法、Folin-Ciocalteu法和亚硝酸钠-硝酸铝-氢氧化钠显色法测定不同树莓中总花色苷、总多酚和总黄酮的含量,利用Pearson相关系数分析树莓的抗氧化活性与各成分含量间的相关性。结果树莓的抗氧化活性与总黄酮和总多酚含量显著相关,尤其与总多酚含量的相关性最高(r>0.91),但与总花色苷含量的相关性不明显。结论多酚类物质是树莓发挥抗氧化作用的主要物质基础。
Objective To study the correlation between antioxidant activity and contents of total anthocyanins,total phenols and total flavonoids of raspberry extract. Methods DPPH and ABTS radical scavenging assays w ere carried out to evaluate the antioxidant activities of raspberry extracts from five varieties harvested at three maturity stages. The contents of total anthocyanins,total phenols and total flavonoids w ere determined by pH-differential method,Folin-Ciocalteuu colorimetric assay and NaNO2-Al( NO3)3-NaOH method,respectively,and their correlations w ith anoxidant activities w ere analyzed by Pearson correlation coefficient. Results It w as found that antioxidant activity w as correlated w ith the contents of total flavonoids and total phenols,especially w ith the content of total phenols( r > 0. 91). Conclusions Phenolic compounds are mostly responsible for the antioxidant activity of raspberry.
